Payal was first inspired in the kitchen by her grandmother, who was a wonderful home cook. In her later years her grandmother couldn't see well so she cooked by touch, measuring the spices and ingredients with her hands and checking doneness by feel. Payal's passion for handmade home food grew as she started a family of her own and now she shares her love of seasonal cooking with both her young sons and guests at her homestay.
She loves looking for lost recipes and learning dishes that people have stopped eating. She believes that daily food should be regional and seasonal, to ensure that the flavors are the freshest and ingredients are nutritious. “Every day cooking should be close to your geography, region and seasons.”
What to expect:
Market Visit:
Meet Payal at her home and then drive to the local market for a tour of the spice shops. Here you will learn about basic Indian ingredients and local, seasonal produce. As you explore you’ll pick up a few ingredients for your cooking lesson.
Cooking Experience:
Payal's kitchen is a spacious, professional space where you will have plenty of room to spread out during your hands-on cooking lesson. Payal and her staff will teach you to prepare 5-6 typical North Indian/Rajasthani dishes including a rice dish, handmade breads like chapatis or batti, and a dessert. Additional dishes for your meal will be prepared in advance. You can expect the cooking lesson and meal to last about 2 to 3 hours. Choose a starting time, either: 12:00pm or 7:00pm.

Payal only serves vegetarian cuisine. Payal runs a homestay out of her house so while other guests might be present during your visit, your Traveling Spoon experience will be private.
