A professional sake sommelier with a M.A in food studies from New York and experiences in culinary industry, Fukuko is passionate about pairing sake with freshly cooked Japanese/Japanese inspired dishes. Inspired by her mother who cooked terrific home-style dishes for her family, Fukuko, a mother of two, now enjoys feeding her family healthy meal using fresh, seasonal vegetables and seafood to her family everyday. She never compromises in the quality of her ingredients because she believes that food is one of the most important components that build a healthy, fit and strong body. Learn about Japanese food and savor it as she pairs it with sake during your private experience in her modern apartment.

Cooking Experience:
Join Fukuko in her kitchen and learn how to cook 4-5 Japanese appetizers. You may learn to make dishes such as a selection of petit sushi (including tuna, salmon roe and smoked salmon) with Japanese unique condiments like yuzu-kosho and ume plum paste, fresh tomatoes and edamame with dashi jelly, fried tofu and seasonal vegetables with sweetened nutty miso paste, sweet and spicy grilled tofu and cheese or chocolate for dessert. She has selected those menus for you to experience both Japanese-exclusive food ingredients and something that you can recreate back home. Enjoy a hands-on cooking lesson during which you will learn Fukuko's secret techniques of creative Japanese home cooking. Enjoy the meal you helped prepare with sake pairings at the dining table.
Meal:
Meet Fukuko in front of Starbucks Coffee at Yotsuya station, then walk together 5 minutes to her beautiful, modern apartment. Enjoy a cup of freshly brewed iced or hot tea, depending on the season, before learning all about sake. Immerse yourself in a sake tasting paired with a variety of Japanese small plates as you learn about the different kinds of sake, its history and production. By the end of your meal, you will know how to tell the difference between four different types of sake. Your menu might include dishes such as a selection of petit sushi, grilled tofu, seasonal cooked vegetables with sweetened miso. Your meal will conclude with sweet chocolate. *Total consumption of sake during the experience will be about 200ml. Please note that the minimum legal drinking age in Japan is 20 years old and this is strictly to be obeyed at the experiences with Japan hosts. Spittoons are not used at Fukuko's for hygienic reasons.
